Bergama'da Bir Endüstri Mirası Örneği: Sağancı Yağhanesi

Abstract

Türkiye'nin İzmir iline bağlı Bergama ilçesi, iklimsel ve coğrafi özellikleri sayesinde, antik dönemden günümüze kadar zeytincilik ve zeytinyağı üretimiyle öne çıkan yerleşimlerden biri olmuştur. Zeytin ve zeytinyağı, günümüzde Bergama'nın önemli gelir kaynaklarından biri olmaya devam etmektedir. Yüksek lisans tez çalışmasında, Bergama Sağancı Köyü'nde 19. yüzyıl sonu ile 20. yüzyıl başında inşa edildiği düşünülen Sağancı Yağhanesi'nin çevresiyle birlikte endüstri mirası kapsamında korunarak yeniden işlevlendirilmesi incelenmiştir. Tezin birinci bölümünde, dünyada zeytin ve zeytinyağı üretiminin tarihsel ve teknolojik gelişimi, Bergama'nın üretimdeki yeri ve kent merkezindeki tarihi fabrikalar ele alınmıştır. Sonraki bölümde, Sağancı Köyü'nün tarihsel gelişimi, zeytinyağı üretim tesisleri ile özgün mekanik donanımları incelenmiştir. Tezin son bölümünde ise, Sağancı Yağhanesi ile çevresinin koruma sorunları ve mimari özellikleri analiz edilerek; rölöve, restitüsyon, restorasyon projeleri hazırlanmıştır. Bergama, a district in Izmir Province of Turkiye, has been one of the prominent settlements for olive cultivation and olive oil production from ancient times to the present day thanks to its climatic and geographical characteristics. Today, olive and olive oil continue to be important sources of income for the region. This master's thesis investigates the preservation of the Sağancı Olive Oil Mill, located in the Sağancı Village in Bergama, which is believed to have been built between the late 19th and early 20th centuries. In the first section of the thesis, the historical and technological development of olive and olive oil production worldwide, Bergama's role in the production, and the architectural features of the historical olive mills in the town center are examined. In the following section, the historical development of Sağancı Village, its historical olive oil mills and their original mechanical equipment are analyzed. In the final section, the preservation issues and architectural features of the Sağancı Oil Mill and its surroundings are analyzed, and restoration, restitution, and refunctioning projects are prepared. Additionally, olive oil museums around the world are reviewed in the terms of relevance to the proposed reuse for the mill.
